Ingredients

500 g fish trimmings and bones
750 g fish fillet, cod or haddock
1  egg
salt and freshly ground black pepper
20 g butter
20 g flour
200 ml single cream
5 sprig(s) parsley
2  onion, chopped
1 glass(es) white wine, dry
2  anchovy fillets, drained
8 tbsp breadcrumbs, you may need more or less
1 ½ l water

Instructions

In a large saucepan, cover the fish trimmings and bones with at least 1.5 litres salted water. Add the onions, the parsley and the wine. Bring to a boil. Reduce the heat and cook over low heat for 25-30 minutes. Strain the soup and collect the stock.

Melt the butter in the saucepan. Sprinkle with the flour and cook stirring for 1-2 minutes. Pour in the fish stock, stirring constantly with a wire whisk. Cook over low heat for 10 minutes.

In a blender, purée 500g of the fish fillets together with the anchovy fillet and the egg. Stir in breadcrumbs until the mixture is well combined and pliable. Shape the mixture to little balls. Add the balls into the soup and bring to a boil. Cook for 5 minutes.

Cut the remaining fish fillet into 3cm cubes, add into the soup and cook for another 3-5 minutes until the fish is just done. Pour in the cream and cook for 1-2 minutes more. Season to taste with salt and pepper.

Serve with fresh white bread.
