Ingredients
oil for frying | |
18 small | baby eggplants |
For stuffing and seasoning: | |
2 clove(s) | garlic, minced |
fresh root ginger, 2,5cm, finely chopped or grated | |
50 g | chickpea flour (Besan) |
4 tbsp | unsweetened coconut |
200 ml | coconut milk |
1 tsp | turmeric powder |
½ tsp | chili powder |
2 tbsp | sunflour oil |
1 tsp | coriander powder |
1 tbsp | chopped fresh coriander leaves |
Instructions
Wash the baby eggplants and do not cut off the stem. If the eggplants are long and thin just cut them once along the middle leaving the stem intact. If the eggplant is round cut twice crosswise.In a bowl combine all the other ingredients, but leave 100ml coconut milk for later use. Mix the ingredients together to a thick paste. Fill the eggplants with this thick paste, leaving approximately half of the paste. Mix the remaining paste with the 100ml coconut milk and soak the filled eggplants in this mixture.
Gently fry the eggplants in hot oil until they are browned and tender and serve warm.
