Bread salad with parma ham recipe details
Ingredients
1 | red bell pepper, halved |
25 g | almond flakes |
1 | red chili pepper, chopped |
300 g | Ciabatta bread, sliced |
250 g | cherry tomatoes, halved |
salt and freshly ground black pepper | |
250 g | rocket, roughly chopped |
1 bunch(es) | spring onions, sliced |
125 g | Parma ham, cut into stripes |
6 tbsp | olive oil |
1 clove(s) | garlic, minced |
5 tbsp | vegetable stock |
Instructions
Preheat the oven to 225°C. Place the bell pepper halves skin side up onto a lined baking tray. Bake until charred. Take out of the oven and cover with a damp kitchen towel for 5 minutes, then peel and dice the bell pepper.In a pan, heat 1 tablespoon of oil. Roast the almonds until golden. Place the almonds, garlic, chilies, 3 tablespoons of oil and the bell peppers into a blender and process until smooth. Season to taste with salt and pepper.
Preheat the oven to 175°C. Place the bread slices onto a lined baking tray and drizzle with 2 tablespoons of oil. Bake for 5 minutes or until golden brown.
Mix half of the pesto with the stock. Cut the bread into bite-sized cubes and place into a bowl. Add the ham, tomatoes, onions and the rocket. Pour over the pesto sauce and toss gently.
Serve the salad immediately, together with the remaining pesto.
