Ingredients

1  red bell pepper, halved
25 g almond flakes
1  red chili pepper, chopped
300 g Ciabatta bread, sliced
250 g cherry tomatoes, halved
salt and freshly ground black pepper
250 g rocket, roughly chopped
1 bunch(es) spring onions, sliced
125 g Parma ham, cut into stripes
6 tbsp olive oil
1 clove(s) garlic, minced
5 tbsp vegetable stock

Instructions

Preheat the oven to 225°C. Place the bell pepper halves skin side up onto a lined baking tray. Bake until charred. Take out of the oven and cover with a damp kitchen towel for 5 minutes, then peel and dice the bell pepper.

In a pan, heat 1 tablespoon of oil. Roast the almonds until golden. Place the almonds, garlic, chilies, 3 tablespoons of oil and the bell peppers into a blender and process until smooth. Season to taste with salt and pepper.

Preheat the oven to 175°C. Place the bread slices onto a lined baking tray and drizzle with 2 tablespoons of oil. Bake for 5 minutes or until golden brown.

Mix half of the pesto with the stock. Cut the bread into bite-sized cubes and place into a bowl. Add the ham, tomatoes, onions and the rocket. Pour over the pesto sauce and toss gently.

Serve the salad immediately, together with the remaining pesto.
