Brandied stuffed peaches recipe details
Ingredients
1 | lemon |
6 | peaches |
125 ml | apricot brandy |
3 tbsp | sugar |
125 g | ricotta cheese |
50 g | cream cheese |
sachet | slivers of toasted almonds |
Instructions
Finely grate the rind of the lemon, squeeze out the juice and strain.Gently poach the fresh peaches with the brandy, sugar, 15ml lemon juice and 150ml water for 5 minutes, turning once. They should not become mushy, so use discretion on the state of ripeness.
Remove the fruit from the liquid and remove the skins. Allow to cool.
Bring the poaching liquid to the boil and allow to bubble until well reduced and syrupy.
Leave to cool.
Beat together the ricotta, cream cheese and grated lemon rind. If you have a sweet tooth, add a little brown sugar to taste.
Halve the peaches and remove the stone. Fill each peach half with the cheese mixture and top with nuts. Drizzle with the poaching syrup.
Serving suggestion:Serve garnished with an edible leaf such as a geranium or nasturtium.
