Poached haddock in mustard sauce recipe details
Ingredients
4 | haddock fillets |
2 tbsp | lemon juice |
2 | onions, halved |
2 | bay leaves |
2 sprig(s) | dill, chopped |
1 tbsp | mustard seeds |
200 g | single cream |
salt and freshly ground black pepper | |
1 tbsp | butter |
1 tbsp | flour |
2 tbsp | mustard |
1 pinch(es) | sugar |
Instructions
Drizzle the fish with the lemon juice. In a saucepan bring salted water to a boil. Add onions, bay leaves and 1 sprig of dill. Cook for 10 minutes. Add the fish and poach for 5-6 minutes over low heat.In a pan melt the butter. Add the mustard seeds and the flour and cook stirring until smooth. Deglaze with the cream and 375ml of the fish stock. Bring to a boil and stir in the mustard. Simmer for 5 minutes. Season to taste with salt, pepper and sugar. Chop the remaining dill and stir into the sauce.
Arrange the fish on plates and serve coated with the mustard sauce.
