Ingredients

4  haddock fillets
2 tbsp lemon juice
2  onions, halved
2  bay leaves
2 sprig(s) dill, chopped
1 tbsp mustard seeds
200 g single cream
salt and freshly ground black pepper
1 tbsp butter
1 tbsp flour
2 tbsp mustard
1 pinch(es) sugar

Instructions

Drizzle the fish with the lemon juice. In a saucepan bring salted water to a boil. Add onions, bay leaves and 1 sprig of dill. Cook for 10 minutes. Add the fish and poach for 5-6 minutes over low heat.

In a pan melt the butter. Add the mustard seeds and the flour and cook stirring until smooth. Deglaze with the cream and 375ml of the fish stock. Bring to a boil and stir in the mustard. Simmer for 5 minutes. Season to taste with salt, pepper and sugar. Chop the remaining dill and stir into the sauce.

Arrange the fish on plates and serve coated with the mustard sauce.
