Bran refrigerator muffins details
- Ingredients:
- 3 cups sugar
- 1 Tablespoon plus 2 teaspoons baking soda
- 1 can fruit cocktail, undrained
- 1 package (15 ounces) bran flakes cereal
- 1 cup vegetable oil
- 1 Tablespoon plus 1 teaspoon cinnamon
- 5 cups flour
- 4 large eggs
- 2 teaspoons salt
- 1 quart buttermilk
Combine all ingredients in a large bowl; beat at medium speed with an electric mixer for 2 minutes. Fill muffin pans 2/3 full. Bake in 400-degree oven for 16 minutes. Note: Batter may be covered tightly and stored in refrigerator up to 3 weeks. Do not stir before using.
