Ingredients:
3 cups sugar
1 Tablespoon plus 2 teaspoons baking soda
1 can fruit cocktail, undrained
1 package (15 ounces) bran flakes cereal
1 cup vegetable oil
1 Tablespoon plus 1 teaspoon cinnamon
5 cups flour
4 large eggs
2 teaspoons salt
1 quart buttermilk
Instructions:

Combine all ingredients in a large bowl; beat at medium speed with an electric mixer for 2 minutes. Fill muffin pans 2/3 full. Bake in 400-degree oven for 16 minutes. Note: Batter may be covered tightly and stored in refrigerator up to 3 weeks. Do not stir before using.
