Braised pork in tomato sauce recipe details
Ingredients
1 sprig(s) | sage |
1 kg | pork loin |
1 tbsp | fresh rosemary, finely chopped |
1 tbsp | fresh thyme, chopped leaves |
1 tsp | dried oregano |
3 | onions, chopped |
1 kg | tomatoes, peeled and diced |
1 clove(s) | garlic, chopped |
salt and freshly ground black pepper | |
100 ml | dry red wine |
olive oil |
Instructions
Season the meat with salt and pepper. In a roasting tin heat the oil and fry the meat until golden brown all around. Take out of the pan and set aside. Fry the onions until lucent, then add tomatoes, garlic, wine and the herbs. Season with salt and pepper. Return the meat, cover and braise over low heat for 1,5-2 hours or until the meat is tender.Take out the meat and allow to stand for 5 minutes. Take out the sage sprig. Check seasoning of the sauce and correct if necessary.
Cut the meat into neat slices and serve with the sauce.
