Braised joint of mutton recipe details
Ingredients
1 kg | joint of mutton (leg or shoulder) |
60 g | smoked bacon, diced |
3 clove(s) | garlic, mashed |
1 | onion, chopped |
2 | tomatoes, diced |
salt and freshly ground black pepper | |
2 tbsp | single cream |
2 tbsp | butter |
2 tbsp | oil |
Instructions
Season the meat with salt, pepper and paprika powder, then turn it in flour. Heat the butter and oil and fry the joint of mutton over medium heat until browned all around. Add the garlic, onions and bacon and cook for some more minutes.Add the tomatoes and a cup of water and bring to a boil. Reduce the heat. Cover and braise over low heat for 60-80 minutes or until the meat is tender, turning the mutton occasionally.
Remove the meat from the saucepan, set aside and keep warm. Pour the cream into the sauce and bring to a boil again. Season to taste with salt and pepper.
Carve the joint of mutton and serve in the sauce.
