Ingredients
1 | duck, ready to cook |
3 | ripe oranges, peeled and diced |
½ | grapefruit, peeled and diced |
1 | duck liver, diced |
1 | apple, peeled, cored and diced |
salt and freshly ground black pepper | |
thyme, chopped | |
⅛ l | water |
2 tbsp | butter |
Instructions
Wash the duck under clear water and pat dry.Rub the duck inside and outside with salt and pepper. Stuff the duck with a mixture of the apple, orange, grapefruit, thyme and liver.
In a large roasting tin, melt the butter. Add the duck and roast from all sides until well browned. Add the water, cover and braise over low heat for 30 minutes. Turn the duck around and braise for 30 more minutes.
Remove the duck from the tin and remove the stuffing from the duck. Pass the duck stuffing through a sieve into the gravy. Add more water if necessary and bring to a boil. Season to taste with salt and pepper.
Carve the duck and place the pieces into the sauce. Allow to stand for 2-3 minutes before serving.
