Bouillon with porcini dumplings recipe details
Ingredients
For the dumplings: | |
5 g | dried porcini mushrooms |
125 ml | milk |
10 g | butter |
salt | |
1 pinch(es) | sugar |
1 pinch(es) | ground nutmeg |
70 g | semolina |
1 | egg |
1 tsp | vegetable oil |
For the soup: | |
1 bunch(es) | chives |
1 ½ l | beef stock |
2 tbsp | sherry |
8 | mushrooms |
Instructions
Soak the porcini mushrooms in lukewarm water for 10 minutes. Drain and finely chop.Bring the milk with the butter, salt, sugar, nutmeg and porcini to a boil while trickling in the semolina and stir until a dumpling will form. Take the pan from heat and allow the mixture to cool slightly. Stir in the egg and the oil until well combined.
Bring salted water to the boil. Cut dumplings out of the dough with help of a spoon, transfer them into the boiling water and cook the dumplings for 5 minutes.
Cut the chives in small rolls. Bring the beef stock to a boil and season with sherry. Finely slice the mushrooms and cook for approx. 2 minutes in the broth. Add the porcini dumplings.
Ladle the bouillon into preheated soup plates or soup bowls and sprinkle with chives.
