Ingredients

3 tbsp vegetable oil
1 large onion, chopped
1  bay leaf
4 medium beets, peeled and grated
2  parsnips, peeled and grated
4  tomatoes, diced
4  carrots, finely chopped
2 tbsp fresh parsley, chopped
1 ½ l water with vegetable stock
1 small green cabbage, chopped
4 medium potatoes, peeled and diced
60 ml white wine vinegar
fresh dill, chopped
Greek style yoghurt. optional
salt and pepper, to taste

Instructions

Heat the vegetable oil in a pot and add the onion and cook, stirring occasionally, for about 2 minutes over medium heat.

Add the beets, parsips, bay leaf, carrots, tomatoes and parsley. Cook, stirring occasionally, for 5 minutes.

Pour in the vegetable stock and bring to a boil. Lower the heat and simmer for 30 minutes.

Add the potatoes and cabbage, season with salt and pepper and simmer, partially covered, for another 30 minutes.

Then stir in the vinegar and simmer for 5 minutes.

Remove the bay leaf and adjust the seasoning if necessary.

Serving suggestion:Serve the soup with a dollop Greek style yogurt and chopped fresh dill.
