Ingredients

1 ½ kg	pork roasting joint, boneless
4 tbsp	clear honey
4 tbsp	French mustard
3 tbsp	cider vinegar
2 tbsp	dark soy sauce
1 piece(s)	fresh ginger, about a thumb sized piece, grated
1 clove(s)	fresh garlic, crushed and finely chopped
	salt and freshly ground black pepper, to taste

Instructions

Preheat the oven to 150°C, gas mark 2. Place the pork joint in a roasting tin, make sure the meat is totally dry all over, this helps to make sure the meat browns. Slow roast uncovered for one and a half hours.

Meanwhile, mix together the honey, French mustard, cider vinegar, soy sauce, garlic, ginger, salt and pepper in a small bowl.

When the Pork has been roasting for one and a half hours, spread the glaze mixture over the pork and return it to the oven for a further hour, turning up the oven temperature to 180°C, gas mark 4.

Remove from the oven and let the pork joint rest for 15 minutes before carving.
