Blueberry muffins details
- Ingredients:
- 2-1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 cup sugar
- 1 cup buttermilk
- 2 eggs
- 1/2 cup butter, melted and slightly browned
- 1-1/2 cup fresh or frozen blueberries
Sir dry ingredients together in large bowl. Make a well in the center. Mix buttermilk, eggs, and butter in a small bowl and pour into the center of the dry ingredients. Mix well with a spoon. Fold in blueberries. (If using frozen berries, do not thaw. Place berries in a sieve and rinse with cold water before adding to batter.)
Bake in greased muffin tins at 400 degrees for 20 minutes.
Yields: 18 muffins
