Blueberry Coleslaw recipe

Ingredients
1 medium | green cabbage, finely shredded |
1 small | red onion, chopped |
50 g | fresh parsley, chopped |
250 g | blueberries |
240 ml | blueberry mayonnaise |
120 ml | sour cream |
60 ml | blueberry vinegar |
3 tbsp | fresh orange juice |
50 g | sugar |
¾ tsp | cloves, ground |
¼ tsp | nutmeg, ground |
salt and pepper, to taste |
Instructions
Place cabbage, onion, parsley and blueberries in a large bowl. Gently toss.
In another small bowl, combine blueberrry mayonnaise, sour cream, blueberry vinegar, orange juice, sugar, cloves, and nutmeg. Season with salt and pepper to taste and mix well.
Pour dressing over cabbage and blueberry mixture and toss.
Refrigerate for 2 hours before serving.
