Blueberry cake recipe details
Ingredients
150 g | blueberries |
4 medium | eggs, separated |
75 g | soft butter |
150 g | sugar |
1 tbsp | sugar |
salt | |
1 pack(s) | vanilla sugar |
750 g | curd cheese |
5 tbsp | cornflour |
50 g | Amarettini biscuits, crushed |
2 tbsp | apricot jam |
Instructions
Sprinkle a buttered cake form with half of the crushed Amarettini. Preheat the oven to 150°C.Purée half of the berries with the remaining sugar. Stir in 2 tablespoons of the cornflour. Beat the egg whites until stiff.
Whisk the butter with 150g sugar, salt and the vanilla sugar until creamy. Whisk in the egg yolks, curd cheese and 3 tablespoons of the cornflour. Fold the beaten egg white into the curd cheese mixture. Mix 1/3 of the curd cheese mixture with the berry purée and the remaining blueberries. Spoon in turn the batters into the cake form and marble with a fork. Bake for 1 hour. Allow to cool for 3 hours.
In a small saucepan mix the jam with 1 tablespoon of water and bring to a boil. Brush the cake with the jam and garnish with the remaining Amarettini.
