Blueberry apple muffins details
- Ingredients:
- 1-1/4 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup oat bran
- 1/2 cup sugar
- 2 eggs beaten
- 3/4 cup skim milk
- 2 Tablespoons vegetable oil
- 3 medium sized apples, cut in small pieces
- 1 cup fresh or frozen blueberries
- 1/4 cup chopped walnuts or pecans
Preheat oven to 425 degrees. Sift flour, baking powder, and salt into bowl and add oat bran and sugar. Stir well to combine. In a separate bowl, beat eggs, milk, and oil. Pour over dry ingredients. Stir only briefly. Add blueberries, apples, and nuts; stir briefly again. Do not overwork – lumps in flour will show. Fill muffin cups nearly to the top. Bake 20 minutes. (You can substitute any fruit or berries for the blueberries.)
