Blue crab soup recipe details
Very delicious, traditional crab soup flavor.

Ingredients
Serves: 6- 2/3 cups diced onion
- 1 celery stalk diced
- 2 cloves garlic minced
- 2 tablespoons butter
- 1 tablespoons Old Bay Seasoning (TM)
- A pinch ground black pepper
- A pinch ground cayenne pepper
- A pinch ground chipotle pepper
- 2 (14.5 ounce) cans stewed tomatoes or 4 cups fresh peeled tomatoes
- 2/3 cups frozen peas
- 2/3 cups fresh or frozen corn kernels
- 1 carrot, sliced
- 1 carrot, diced
- 2 red potatoes 1/2 inch cubed
- 1 bay leaf
- 1 tablespoon Worcestershire sauce
- 1 (5.5 ounce) can Spicy Hot V8 juice TM
- 3 cups beef broth
- 1 pound blue crab crabmeat
- 1 tablespoon fresh chopped Italian parsley
- 1/2 teaspoon sea or kosher salt
Preparation method
Prep: 15 mins | Cook: 1 hour 15 mins1. In a 4 quart pot sauté onions, celery and garlic in butter until onions are wilted.
2. Add Old Bay seasoning and ground peppers to coat.
3. Place whole tomatoes, peas, corn, sliced carrots, diced carrots, potatoes, bay leaf, Worcestershire sauce, spicy hot V8 vegetable juice and beef broth to the pot.
4. Cover and heat to simmer for 1 hour.
5. Add crab meat, parsley and salt (to taste) for last 10 minutes. Serve hot.
