Blue corn banana pancakes recipe details
- Ingredients:
- 1/8 cup oil
- 2 eggs
- 1 cup blue corn flour, finely ground
- 1-1/2 cups of white soft grain flour
- 2 teaspoons baking powder
- pinch of salt
- 1-1/2 cups of milk
- sliced bananas
Mix all dry ingredients. Mix eggs, milk and oil and add to dry ingredients. Batter should be somewhat thick. Spoon with a 1/4 measuring cup onto a heated, oiled pan or grill. Place sliced bananas on top and when bubbles in pancakes rise to surface flip them over and bake other side. Serve with butter and maple syrup.
