Blow your mind chicken salad recipe details
All sorts of good stuff mixed together to create a chicken salad that will definitely blow your mind! Serve on a bed of mixed greens, as an appetizer with crackers or pita slices, or load up a kaiser roll and top it of with a slice of Swiss cheese…regardless, it’ll blow your mind!

Ingredients
Serves: 6- 3 boneless skinless chicken breasts
- fresh ground pepper
- garlic powder (or garlic blend seasoning)
- salt, to taste
- 1/2 tsp lemon pepper, or to taste
- 1/2c light sour cream
- 2 T deli or dijon mustard
- 1/2c light mayo
- 2 T white wine vinegar
- 1/3c shredded parmesan (or bleu cheese crumbles)
- 1 lg granny smith apple, peeled and diced
- 1 stalk celery, diced
- 2 T minced vidallia onion
- 1 sm. red bell pepper, diced (or use 2-3T diced pickled red pepper)
- 1/3c pecan pieces
Preparation method
Prep: 20 mins | Cook: 15 mins | Extra time: 1 hour, cooling1. Season both sides of chicken with pepper, garlic powder, salt, lemon pepper. Set aside in refrigerator for up to 4 hrs.
2. In a large bowl whisk together sour cream, mustard, mayo, vinegar, Parmesan, and about 1t pepper. Set aside in refrigerator.
3. Dice apple, celery, onion, and red pepper.
4. Grill chicken. Chop chicken into fairly small pieces. Set aside in refrigerator to cool.
5. when chicken has cooled, mix everything together. Adjust to taste with salt. Refrigerate at least 30 min.
