Ingredients

200 g mushrooms, chopped
2 medium onions, chopped
500 ml red wine
120 ml sweet port
1.3 l beef stock
300 g fresh or frozen blackberries
15 g fresh sage, chopped
1 tbsp honey
salt and pepper, to taste

Instructions

Heat the olive oil in a saucepan and sauté the shallots and mushrooms until lightly browned.

Add the wine, port, stock, blackberries and sage and cook over high heat until the sauce has thickened lightly and is reduced a little. This could take 40 minutes.

Strain through a sieve, pressing on the solids. Season to taste with honey, salt and pepper.

The sauce may be stored, covered, in the refrigerator for up to 5 days.
