Blackberry sage steak sauce recipe details
Ingredients
200 g | mushrooms, chopped |
2 medium | onions, chopped |
500 ml | red wine |
120 ml | sweet port |
1.3 l | beef stock |
300 g | fresh or frozen blackberries |
15 g | fresh sage, chopped |
1 tbsp | honey |
salt and pepper, to taste |
Instructions
Heat the olive oil in a saucepan and sauté the shallots and mushrooms until lightly browned.Add the wine, port, stock, blackberries and sage and cook over high heat until the sauce has thickened lightly and is reduced a little. This could take 40 minutes.
Strain through a sieve, pressing on the solids. Season to taste with honey, salt and pepper.
The sauce may be stored, covered, in the refrigerator for up to 5 days.
