Ingredients

Serves: 4

• 1 1/2 cups water
• 1 cup dry white wine
• 2 scallions, sliced
• 8 black peppercorns
• 4 (4 ounce) salmon fillets
• 3/4 cup nonfat sour cream
• 1/3 cup diced peeled cucumber
• 2 tablespoons snipped fresh dill
• 1 tablespoon fresh lemon juice
• 1/4 teasppon salt
• 1/8 teaspoon ground black pepper
• Fresh dill sprigs, for garnish

Preparation method

1. Combine water, wine, scallions, and peppercorns in a large skillet. Add salmon and place the skillet over high heat. Bring to a boil, then lower heat and cover. Simmer for 6 minutes, until fish flakes easily.
