Black bean turkey chili for the slow cooker recipe details

Ingredients
Serves: 6- 1 tablespoon olive oil
- 1/2 pound sliced mushrooms
- 2 red or green bell peppers, chopped
- 2 celery ribs, chopped
- 1 onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 1 pound ground turkey
- 4 garlic cloves, minced
- 2 teaspoons dried oregano
- 1 (28 ounce) can diced tomatoes (don’t drain)
- 2 (15 ounce) can black beans, rinsed and drained
- 1 large carrot, chopped or grated
- 1 cup water
- 1 cup BBQ sauce
- 1/4 cup chili powder
- 1 teaspoon liquid smoke
Preparation method
Prep: 10 mins | Cook: 8 hours1. Warm the olive oil in a large skillet over medium heat.
2. Add the mushrooms, peppers, celery, onion, and jalapeno to the hot oil and cook, stirring, until onion browns, about 10 minutes. Add the ground turkey and brown for 10 minutes, then stir in the garlic, oregano, and cumin and cook for 2 more minutes.
3. Pour the cooked vegetables into a slow cooker, dump in the tomatoes, beans, carrot, water, BBQ sauce, chili powder, and liquid smoke, and cover.
4. Turn heat on to Low and cook for 8 hours. Adjust seasonings, adding more salt and pepper if necessary, then serve.
