Black bean soup recipe details
Ingredients
500 g | dried black beans |
750 g | smoked ham hocks |
2 liter(s) | water |
600 ml | chicken stock |
1 ½ tbsp | olive oil |
2 | green peppers, seeded and finely chopped |
2 large | onions, finely chopped |
1 tbsp | garlic, minced |
1 tsp | cumin |
50 ml | red wine vinegar |
salt, to taste | |
2 tbsp | fresh coriander, finely chopped |
dry sherry, to taste |
Instructions
In a large kettle combine beans, ham hocks and water. Cover and bring to a boil. Reduce heat and simmer for about 2 hours, until the beans are tender. Remove the ham hocks and set aside. Drain the beans, reserving the cooking liquid and set the beans aside.Measure the cooking liquid and add stock to make 2 litres. Purée the beans in a food processor, add a small amount of cooking liquid and blend until smooth. Transfer the purée to a large bowl and add the remaining liquid.
Heat the oil in a heavy kettle. Add peppers, onions garlic and cumin. Cook stirring until the onions are tender. Add tomatoes and vinegar and simmer for 15 minutes.
Remove the meat from the ham hocks and chop. Discard skin and bones.
Combine the meat with the puréed bean soup and the vegetable mixture. Bring to a boil, then remove the kettle from the stovetop, taste and correct seasoning. Add coriander, if desired.
Serve the soup in bowls and add sherry to taste.
