Ingredients
Serves: 8- 3 cloves garlic, 2 minced and 1 whole
- 2 tablespoons minced parsley
- 2 teaspoons dried rosemary, crushed
- 1/2 teaspoon black pepper
- 1/2 teaspoon lemon zest
- 1 (7 pound) bone-in whole turkey breast
- 1 large onion, cut into thin wedges
- 1 celery stalk, cut into 1-inch slices
- 1 carrot, cut into 1/2-inch slices
- 1 parsnip, cut into 1/2-inch slices
- 1 bay leaf
- 2 (14 ounce) cans chicken broth
Preparation method
Prep: 25 mins | Cook: 2 hours1. Preheat oven to 400 degrees F.
2. Combine minced garlic, parsley, rosemary, pepper, and lemon zest in a bowl. Rub under turkey skin where you can reach without breaking the skin, then rub the rest of the mixture on top of the turkey.
3. Place onions, celery, carrots, parsnips, whole garlic clove, and bay leaf in a roasting pan. Set turkey (skin-side down) on the vegetables, drizzle all with broth, and cover the pan with foil.
4. Roast for 1 hour, then remove foil, turn oven heat down to 350 degrees F, and flip the turkey breast. Cook for another 1 1/2 hours, until turkey reaches an internal temperature of 170 degrees F.
5. Carve and serve.
