Ingredients
Serves: 4- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon ground coriander
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1 pound pork tenderloin
- 1 cup balsamic vinegar
- 2 tablespoons brown sugar
- 4 (8-inch) flour tortillas
- 1 1/2 tablespoons Dijon mustard
- 4 lettuce leaves
- 1 1/2 red onions, thinly sliced
Preparation method
Prep: 15 mins | Cook: 20 mins1. Preheat grill to medium.
2. Sprinkle pork with garlic powder, oregano, coriander, 1/2 teaspoon pepper, and salt. Rub the spices into the tenderloin, then place on grill. Close lid; cook for about 20 minutes, or until pork reaches 160 degrees F internally, turning occasionally.
3. Remove pork from grill and slice thin on a cutting board.
4. While pork is grilling, stir balsamic vinegar, sugar, and 1/2 teaspoon black pepper together in a saucepan and set over medium-high heat. When mixture boils, continue to simmer (stirring constantly) until the liquid reduces down to a thicker sauce or reduces by half.
5. Drizzle pork with some of the sauce. Toss to coat.
6. Coat one side of each tortilla with mustard. Top with lettuce, sliced pork, onion, and the rest of the sauce; roll up like a burrito and serve.
