- Ingredients
- 2 eggs, lightly beaten
- 2 Tablespoons cooking oil
- 1 Tablespoon honey or brown sugar
- 1-3/4 cups whole wheat flour
- 1/4 cup wheat germ
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon cloves
- 1-1/2 to 2 cups orange juice
- 1 apple, cored and chopped
- 3/4 cup chopped walnuts
- Lemon/Ginger Syrup:
- 1 cup of your favorite pancake syrup
- 2 Tablespoons lemon juice
- 1/2 to 3/4 teaspoon powdered ginger
In a large bowl, mix the eggs, oil, and brown sugar or honey; set aside. In a smaller bowl, mix the dry ingredients, then add to egg mixture. Add orange juice to desired consistency. Batter will be slightly lumpy. Blend in apple and walnuts. Cook on medium-hot griddle using 1/4 cup to measure. Turn once, when top begins to bubble.
Lemon/Ginger Syrup:In a microwave safe container, mix syrup, lemon juice, and powdered ginger. Microwave at 70% power for 1 minute or longer, until hot. Pass with pancakes.
