Berry strudel recipe details
Ingredients
600 g | cream cheese |
50 g | sugar |
2 tbsp | sugar |
5 tbsp | breadcrumbs |
2 pack(s) | vanilla sugar |
1 tbsp | cornstarch |
2 | egg yolks |
100 g | strawberries, hulled and diced |
50 g | blueberries |
50 g | brambles |
50 g | redcurrants |
100 g | butter |
1 pack(s) | ready rolled out puff pastry |
3 tbsp | pistachios |
Instructions
Mix the cream cheese with 50g of the sugar, 3 tablespoons of the breadcrumbs, vanilla sugar, cornstarch and the egg yolks. Fold in the berries.Melt the butter and allow to cool a bit. Brush the pastry with the melted butter. Sprinkle with the remaining breadcrumbs. Spread one half of the pastry with the berry cream. Roll up and transfer the strudel onto a lined baking tray. Brush with the remaining butter.
Bake in the preheated oven at 180°C for 35-40 minutes. Caramelize the remaining sugar and stir in the pistachios. Allow to cool, then chop the pistachios. Brush the strudel with the remaining butter and sprinkle with the pistachios.
Serve with whipped cream or vanilla ice cream.
