Belgian endive in a ham skirt recipe details
Belgian endive is wrapped in a slice of ham, then covered with a Bechamel sauce and baked in the oven. The recipe was a favorite of mine when I was living in Austria and finally got hold of the endive my father used to grow in his garden in Belgium. This is one of the various recipes with endive I’ve experimented with. Add some fine bread crumbs if desired.

Ingredients
Serves: 4- 4 large Belgian endive
- 1 cup water for blanching
- 4 large slices of cooked ham
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- salt and pepper to taste
- pinch nutmeg
- lemon juice
- 1 egg yolk
- 1/4 cup grated Parmesan cheese
Preparation method
Prep: 10 mins | Cook: 30 mins1. Preheat oven to 375 degrees F (190 degrees C).
2. Wash the endives and blanch them in the water. Remove them from the water and let them drip dry. Keep the blanch water. Wrap each endive in a slice of ham. Place the endive in a greased baking form.
3. Make a Bechamel sauce in a small pan by combining butter, flour, milk and blanch water. Add salt, pepper and nutmeg to taste. Heat and stir until the Bechamel thickens. Remove from the heat and add the lemon juice, egg yolk, and Parmesan cheese. Pour over the endive.
4. Bake in preheated oven for 30 to 40 minutes.
