Beetroot casserole recipe details
Ingredients
800 g | beetroot, sliced |
1 | onion, diced |
2 tbsp | butter |
250 ml | vegetable stock |
100 g | sour cream |
2 | eggs |
100 g | grated cheese (Cheddar or Gouda) |
salt and pepper | |
nutmeg | |
½ bunch(es) | parsley, chopped |
50 g | pine nuts, chopped |
Instructions
Preheat the oven to 200°C.Peel and slice the beetroot. Sauté the diced onion in butter. Add the beetroots and the vegetable stock. Bring to a boil and simmer for approximately 5 minutes.
Transfer the beetroot into a greased casserole dish. Combine the sour cream with eggs and cheese and season with salt, pepper and nutmeg. Add the chopped parsley and pine nuts. Pour the sauce over the beetroot ad bake for approximately 20 minutes.
