Ingredients

3 kg boneless pork
50 g paprika
2 tbsp black pepper, ground
½ tsp sage, ground
½ tsp dried thyme
1 tbsp granulated garlic
1 tbsp salt
700 ml ale
240 ml maple syrup
8 clove(s) garlic, minced

Instructions

For the spice rub combine paprika, black pepper, sage, thyme, granulated garlic and salt. Season pork with the rub, coating it evenly.

Preheat oven to 180°C.

Place meat on a roasting rack in a roasting pan, and roast in the oven for 15 minutes.

Carefully transfer pork to a large ovenproof casserole.

In a separate bowl, combine beer and maple syrup and mix well. Pour over pork, cover casserole tightly with aluminum foil.

Cook in the oven at 130°C for about 2 hours until meat is tender.
