Based on Indian Rogan Josh (red lamb), this recipe also borrows from Mexican and American culture to create something quite unique, and delicious. very quick and easy, the actual rolling of the wraps is the only semi-difficult part.
Ready in: 35 mins

Ingredients

Serves: 6
  • 2 pounds chopped beef steak
  • 1.5 cups basmati rice
  • 2 Vidalia onions
  • 4 chili peppers
  • non-transfat cooking oil
  • 2 cups hot curry paste
  • 1 cup water
  • (burrito size) wraps
  • 8 ounces sour cream

Preparation method

Prep: 15 mins | Cook: 20 mins

1. In a skillet lightly brown the steak (not necessary to be too thorough as it will be cooked more later). Remove the chopped steak from the skillet and set aside.
2. Put the basmati rice in to your rice cooker and start it (by the time its finished you will be too).
3. Place the onion and chili pieces into the skillet adding just enough oil to coat them. On medium heat cook the onion and chili pieces until the onions are tender and lightly browned. Remove and drain the onions and chilis.
4. Put the lightly browned chopped steak and the onions and chilis into the skillet togeather. Mix in the hot curry paste and water. Cook over medium heat until the sauce thickens and the beef has taken on a reddish hue. Remove from heat and set aside.
5. Place a wrap down, and spread sour cream liberally in the center. Place a fist sized amount of the sauce laden beef/onion/chili peppers, on top the sour cream. Place a scoop of the cooked basmati rice on top of everything you have already put on the wrap. Salt and pepper to taste. Roll the wrap into a nice tight burrito.
