Beef and green bean casserole recipe details
Ingredients
500 g | green beans, trimmed and halved |
2 | onions, chopped |
salt and pepper | |
1 clove(s) | garlic, chopped |
2 tbsp | oil |
600 g | beef mince |
2 tbsp | tomato puree |
1 can(s) | peeled tomatoes, diced |
paprika powder | |
sugar | |
1 tbsp | butter |
1 tbsp | flour |
250 ml | vegetable stock |
250 ml | milk |
100 g | freshly grated Cheddar cheese |
Instructions
Cook the beans in salted water for 7 minutes. Drain and rinse with cold water.In a saucepan, heat the oil. Stir-fry the mince with onions and garlic for 10-15 minutes or until the meat is brown and crumbly. Stir in the tomato purée and fry for 2 minutes. Pour in the tomatoes. Season with salt, pepper, sugar and paprika powder, cover and simmer for 10 minutes.
In a saucepan heat the butter. Stir in the flour and cook stirring until well combined. Whisk in the milk and the stock and bring to a boil. Cook over low heat, stirring frequently, for 5 minutes. Add most of the Cheddar cheese and cook stirring until melted. Season to taste the sauce with salt, pepper and sugar.
Layer the meat sauce and the beans into a casserole dish. Cover with the cheese sauce. Sprinkle with the remaining cheese. Bake in the preheated oven at 180°C for 30 minutes.
Serve with fresh French bread.
