Beef and bean cottage pie recipe details
Ingredients
2 tbsp | olive oil |
2 medium | onions, chopped |
salt and freshly ground black pepper | |
600 g | beef mince |
1 can(s) | baked beans (400g) |
1 can(s) | kidney beans (400g), drained |
1 tsp | vegemite (yeast extract) |
2 tsp | dried mixed herbs |
2 tbsp | chili flakes |
1 kg | potatoes, peeled |
250 g | carrots, peeled |
2 clove(s) | garlic, chopped |
150 ml | hot milk |
butter | |
freshly grated nutmeg |
Instructions
In a pan heat the oil and sauté the garlic and the onions until lucent. Add the minced meat and fry until crumbled. Add the beans, Vegemite, herbs and chili flakes. Transfer the mixture into a casserole dish. Season to taste with salt and pepper.Cook the potatoes in salted water for 20 minutes or until soft. Drain the potatoes and pass through a potato ricer into a bowl. Add approximately 150ml of hot milk (the amount needed will vary, depending on the type of potatoes used) and a large knob of butter and mash until fluffy. Season to taste with salt and nutmeg.
Cover the minced meat and bean mixture in the casserole with the mashed potatoes. Bake in the preheated oven at 180°C for approximately 30 minutes until golden browned and bubbling.
Serve with fresh green salad.
