Bean fennel pasta salad recipe details
Ingredients
2 | chicken breasts, grilled, cut into bite-sized pieces |
500 g | fresh green beans, cut into small pieces |
2 medium | onions, chopped |
1 bulb(s) | fennel. sliced |
2 tbsp | olive oil |
400 g | pasta, uncooked |
4 medium | tomatoes, diced |
12 | Greek olives, halved |
fresh parsley, chopped | |
For the Dressing: | |
60 ml | olive oil |
60 ml | lemon juice |
2 clove(s) | garlic, minced |
½ tsp | Dijon mustard |
salt and pepper, to taste |
Instructions
Preheat oven to 200°C.Cook pasta al dente. Drain and place in a large serving bowl. Add the tomatoes, olives, parsley and grilled.
Place beans, onions, and fennel in a baking pan and drizzle with oil. Toss to coat. Bake for 20-25 minutes, stirring occasionally.
Remove from oven and add roasted vegetables to the pasta bowl.
Prepare the dressing and drizzle over the salad. Toss to coat.
