Basil garlic linguine for lovers recipe details
For basil and garlic lovers only, this simple, fresh pasta recipe can be eaten as a meal or as a side. Make it heartier, if you wish, by adding cooked chicken, bacon or pancetta along with the white wine. I use linguine, but any good pasta will do– remember to undercook it slightly. Add cayenne for heat. Delish.

Ingredients
Serves: 4- 1 pound linguine, dry
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 yellow onion, diced
- 1 cup white wine
- 6 garlic cloves, minced
- 1 cup finely shredded fresh basil
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon crushed black pepper
- 3/4 teaspoon salt
Preparation method
Prep: 10 mins | Cook: 30 mins1. Bring a big pot of water to a boil over medium-high heat for the pasta.
2. In a separate stockpot, heat olive oil and butter over medium heat. Add onions and cook, stirring occasionally, for 5 minutes.
3. Add the white wine and continue cooking until wine is reduced by half, about 15 minutes. Add the garlic and cook 3 minutes longer.
4. Meanwhile, cook pasta 2 minutes less than recommended time on package. Drain the pasta well, reserving 1 cup cooking liquid, and add pasta to the stock pot after garlic has been cooking for its three minutes. Toss gently.
5. Add basil and cook 2 minutes, stirring. Add the Parmesan cheese and cook another minute, stirring. If desired, add reserved cooking liquid to achieve your desired consistency (pasta will thicken after standing). Then, add black pepper and salt, stir, and remove to warmed bowl.
