Basic baked cheesecake recipe details
Ingredients
For the Base: | |
250 g | sweet plain biscuits of choice, crushed |
90 g | unsalted butter, melted |
2 tbsp | ground almonds |
For the Filling: | |
250 g | cottage cheese |
500 g | cream cheese |
175 g | caster sugar |
3 tbsp | double cream |
1 tsp | vanilla extract |
¼ tsp | lemon zest |
whipped cream, to serve | |
freshly grated nutmeg, to serve |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F.Base:Crush biscuits in a bowl, use the rounded end of a rolling pin. Add butter and almonds and mix thoroughly. Press into the base and onto sides of an 8-inch, 20cm springform cake tin.
Filling:Press cottage cheese through a sieve into a bowl. Add cream cheese, sugar and cream and beat together thoroughly. Add eggs one at a time, then add vanilla and lemon rind, beating well.
Pour into tin and bake for about 45 minutes. Turn off heat and leave in oven to cool completely. Chill for at least 3 hours before serving. Remove tin and transfer to serving dish, top with whipped cream and a sprinkling of nutmeg before serving. Serve chilled.
