Barb's savory frittata recipe details
- Ingredients
- 8 medium potatoes (cubed)
- 12 large eggs
- 1/4 cup cream, half & half, or milk
- 3/4 cup salsa
- 1 to 2 Tablespoons fresh chopped garlic
- 2 to 3 Tablespoons olive oil
- 2 Tablespoons chopped cilantro
- salt and pepper to taste
In an ovenproof skillet, saute potatoes in olive oil with garlic and salsa; season with salt, pepper and cilantro. Beat eggs with cream. When potatoes are slightly browned, pour egg mixture over potatoes. Bake in oven at 400 degrees for approximately 25 minutes until top is firm.
