Ingredients
Serves: 3- 1 (8 1/2 ounce) box Jiffy(R) Cornbread Mix
- 1 egg
- milk or water for cornbread mix, see box for amounts
- 2 chicken breasts
- 1/2 (1 1/4 ounce) packet taco seasoning
- 1/3 cup water
- 1/4 cup barbecue sauce
- 1/2 cup shredded cheddar cheese
- lettuce, sour cream, diced tomato, etc. for toppings
Preparation method
Prep: 10 mins | Cook: 25 mins | Extra time: 5 mins, resting1. Preheat the oven to 400 degrees F. Coat a 9×13-inch baking dish with nonstick cooking spray.
2. Prepare the cornbread mix according to directions on box, using eggs and milk. Pour into greased baking dish and put in oven for 6 to 8 minutes.
3. While cornbread is baking, brown chicken in olive oil in skillet over medium-high heat. While chicken is coking, cut into bite-sized pieces. Cook until chicken is no longer pink in the middle and has reached an internal temperature of 165 degrees F, about 10 minutes.
4. Add the taco seasoning and 1/3 cup water. Let simmer for 2 minutes.
5. Take cornbread out of oven and gently spread the barbecue sauce evenly over top of it (be careful, the cornbread might be soft).
6. Gently lay the chicken over top of the barbecue sauce. Sprinkle shredded cheese over the chicken.
7. Put the pan back in the oven for 15 minutes.
8. After removing from oven, let sit for 5 minutes, then cut into squares for individual pieces. Add lettuce, sour cream, diced tomatoes if desired.Substitution
You can substitute ground beef, turkey, etc. for chicken.
