Bananas with Iced Coconut Custard recipe

Ingredients
4 | bananas, steamed |
For the coconut custard: | |
800 ml | coconut milk |
100 g | rice flour |
¼ tsp | salt |
150 g | sugar |
½ tsp | vanilla |
For the syrup: | |
120 ml | water |
100 g | sugar |
To serve: | |
crushed ice |
Instructions
Mix rice flour with 120ml of coconut milk and set aside.
Put remaining coconut milk in a saucepan, add salt and bring to a boil. Reduce heat and bring to simmer. Cook for 2 minutes, stirring constantly.
Stir in the reserved rice flour mixture and cook for another 2 minutes. Add sugar and vanilla and stir until sugar dissolves. Set aside to cool.
Combine syrup and sugar in small saucepan and bring to the boil. Simmer for 3 minutes and stir until sugar is dissolved. Cool.
Slice bananas and divide between 4 large serving bowls. Add some of the coconut custard and add crushed ice to each bowl.
Sprinkle each portion with syrup.
