- Ingredients
- 1 cup whole-wheat flour
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup margarine or butter, softened
- 1/2 cup sugar
- 2 eggs
- 1-1/2 cups mashed banana (3 ripe)
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 cup walnuts, coarsely chopped
Preheat oven to 375 degrees. Grease muffin cups. In a large bowl, stir together the whole-wheat flour, flour, baking soda, baking powder, and salt. In a separate bowl, cream the butter and sugar; beat in eggs. Stir in the mashed banana, milk, and vanilla. Gently stir the banana mixture into the flour mixture; stir in the walnuts. Spoon the batter into prepared muffin cups. Bake for 25 minutes or until toothpick inserted in middle comes out clean.
