Banana oat streusel muffins recipe details
- Ingredients:
- 1-1/4 cups all-purpose flour
- 1 Tablespoon baking powder
- 1/8 teaspoon salt
- 2 egg whites, slightly beaten
- 1/2 cup skim milk
- 1/3 cup plus 1 teaspoon oil
- 2 cups oat flakes
- 1 cup finely chopped banana
- 1/2 teaspoon cinnamon
Mix flour, baking powder and salt. Combine egg whites, milk, 1/3 cup sugar and 3 Tablespoons oil. Add to flour mixture; stir until just moistened. Stir in 1-1/2 cups cereal and the banana. Spoon into greased muffin pans.
Mix 1/2 cup cereal, 1 Tablespoon sugar and the cinnamon. Add 1 teaspoon oil; stir until crumbly. Sprinkle over muffins. Bake at 350 degrees for 25 minutes or until tester comes out clean. Let stand 5 minutes.
150 calories, 170 mg sodium, 4 g fat, and 0 g cholesterol per muffin.
