Ingredients
1 large egg
1/2 cup milk
1 cup self-rising flour
3 Tablespoons sugar
3/4 cup mashed ripe bananas
Instructions:

Did you know that New Orleans’ climate is temperate enough to grow bananas? At the St. Charles Guest House, our little pool and patio are surrounded by a thicket of banana trees that grow real bananas. Even though they freeze at the first frost (usually late December or early January) and have to be cut way back, they come out even bigger starting in early spring. Our guests from other parts of the country and Europe are particularly entranced by this.

Beat the egg and milk together. Add to this mixture the flour and sugar, which has been sifted together. Blend in the mashed bananas. Drop by small teaspoonfuls into medium hot oil. Turn with slotted spoon when brown. Drain on a paper towel and dust with confectioners sugar. Make sure the oil is not too hot, as the fritters will not cook on the inside before getting too brown.
