Ingredients

  Graham Crackers or similar
60 g butter
800 g cream cheese
90 g sugar
2 tbsp cornstarch
3 medium eggs
2  bananas, mashed
120 ml whipping cream
2 tsp vanilla extract


Instructions

Preheat oven to 180°C.

Place crackers in a blender and process until finely crushed. Add butter and process until blended. Press crumb mixture onto bottom of springform pan; refrigerate.

In large bowl beat cream cheese until creamy. Add sugar and cornstarch and beat until blended. Add eggs, one at a time, beating well after each addition. Add mashed banana, cream, and vanilla.

Remove chilled crust from the fridge and pour mixture inside. Bake for 15 minutes.

After 15 minutes reduce oven temperature to 100°C and continue baking 75 minutes longer or until center is almost set. Cool completely on wire rack before removing rim of pan. Refrigerate cheesecake, uncovered, for at least 6 hours before serving.
