Ingredients

120 g butter, softened
130 g sugar
1 medium egg
3 large bananas, mashed
1 tsp baking soda
200 g flour
½ tsp nutmeg
1 pinch(es) salt
100 g pecans, chopped

Instructions

Preheat the oven to 180°C.

Cream the butter and sugar until fluffy. Add the egg and continue to beat until the mixture is creamy.

Mix the mashed bananas with the baking soda and set aside for 2 minutes.

Combine both mixtures and then add the flour, salt, and nutmeg.

Fold pecans into the batter. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Cool on wire racks.
