- 2 cups flour (light measure)
- 1/2 cup plus 3 Tablespoons sugar
- 1 Tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup chocolate chips
- 1/2 cup butter, cubed
- 1 large very ripe banana, mashed
- 3/4 cup heavy cream
- 1 large egg
Preheat oven to 425. Mix flour with 1/3 cup sugar, baking powder, salt, and chocolate chips. Cut in butter. In a small bowl, whisk cream and egg until frothy, mix in mashed banana, then pour in center of flour all at once. Mix just until flour disappears and a soft dough forms. Spread in a circle on a greased cookie sheet, or spread in round 8″ or 9″ cake pan greased. Sprinkle with remaining 3 tablespoons sugar and bake about 15-17 minutes, until golden brown. Cut in wedges and serve warm.
