Ingredients

70 g walnuts
50 g banana flakes
For the dough:
200 g soft butter
150 g soft sugar
1 tsp vanilla extract, 1-2 tsp
2 drop(s) rum
1 pinch(es) salt
1 pinch(es) cinnamon
4  eggs
300 g flour
50 g corn starch
2 tsp baking powder
3 tbsp milk
2  ripe bananas, approx. 200g
To soak:
drop(s) rum
tbsp water
For the glaze:
150 g dark chocolate
1 tsp oil
50 g banana flakes
30 g walnut halves

Instructions

Roughly chop the walnuts and crumble the banana flakes.

Beat the butter until soft and creamy. Bit by bit trickle in the sugar. Add the vanilla extract, rum, salt and cinnamon. Whisk in the eggs, one at a time.

Preheat the oven to 180°C.

Mix the corn starch, flour and baking powder, and sieve into a bowl. Stir in the milk. Peel, halve and slice the bananas. Fold the bananas, walnuts and the banana flakes in the dough.

Divide the dough on a greased baking tray and flatten. Bake the cake in the preheated oven for approximately 15 minutes. Transfer the cake on a wire rack.

Mix the rum with the water and with a baking brush soak the still warm cake with the rum and water mixture. Allow the cake to cool.

Chop the chocolate, combine with oil and melt over low heat. Coat the cake with the chocolate glaze. Leave to get slightly firm, then cut the cake into wedges. Garnish with banana flakes and walnut halves. Allow the chocolate to get completely firm.
