Balsamic and parmesan glazed mushrooms recipe details
Ingredients
50 ml | Balsamico vinegar (Tradizionale) |
50 ml | lime juice |
45 ml | brown sugar |
2 clove(s) | garlic |
2 tsp | Parmesan cheese (Parmigiano Reggiano) |
½ tsp | hot red pepper flakes or 1 tsp, if you like it more hot |
250 ml | coarsely chopped walnuts |
45 ml | olive oil or other vegetable oil |
500 g | small fresh mushrooms, white or brown |
Instructions
In a measuring cup or small bowl, mix vinegar, lime juice, sugar, Parmesan cheese, garlic and hot red pepper flakes; set aside.Heat a large preferable heavy skillet over medium-high heat. Add walnuts; cook and stir constantly for 2 to 3 minutes or until lightly toasted; remove and set aside.
In the same skillet, heat oil over medium-high heat; add mushrooms and stir-fry for 3 to 4 minutes. Add the walnuts and stir in the vinegar mixture while stirring constantly for 2 to 3 minutes or until the sauce is bubbling and the mushrooms are well coated.
Serve on hot rice, mixed greens or as a side dish to meat.
