Ingredients

1 medium	lemon, juice and zest
1 handful	rosemary, chopped
	salt and freshly ground black pepper
2 sprig(s)	fresh thyme, chopped
2 clove(s)	garlic, crushed
600 g	Purple Majesty potatoes, skin on, brushed and cut into wedges.
2	red onions, quartered
4 stalk(s)	leek, trimmed and cut into 5cm pieces
3	multicoloured bell peppers, cut into large pieces
2 stalk(s)	celery, sliced
2	parsnips, sliced
2	carrots, sliced
3 tbsp	olive oil
200 g	cherry tomatoes, halved

Instructions

In a bowl mix the oil with lemon zest and juice, the herbs and the crushed garlic. Season to taste with salt and pepper.

Place the potatoes with leeks, onions, bell peppers, parsnips, celery and carrots into a roasting tin. Drizzle with the marinade and toss until well coated. Bake in the preheated oven at 200°C for 25 minutes. Add the cherry tomatoes and roast for 10 more minutes or until the potatoes are cooked.
