Baked pumpkin with caramelized onions recipe details
Ingredients
1 kg | pumpkin, cut into chunks |
120 ml | water |
60 ml | vegetable oil |
4 medium | onions, chopped |
50 g | sugar |
2 tsp | cinnamon |
salt and pepper, to taste |
Instructions
Preheat the oven to 180°C.Place pumpkin chunks in an ovenproof dish. Add the water and cover tightly. Bake until tender, 40-45 minutes. Let cool and set aside.
In a large skillet over medium heat, heat the oil and sauté the onions until tender, 5 to 6 minutes. Add sugar, cinnamon, salt and pepper. Cook, stirring, until the onions are caramelized, 15 to 20 minutes.
Spread the onion mixture evenly over the pumpkin and return to the oven. Bake until heated through, 10 minutes.
