This is a great recipe that my mom makes but I but I tweaked it a little and if you like clam chowder you must make it!
Ready in: 1 hour 45 mins
Ingredients
Serves: 8- 6 potatoes, peeled and cubed
- 6 strips thick-cut bacon, chopped
- 6 tablespoons butter
- 1/2 large onion, chopped
- 2 stalks celery, chopped (optional)
- 3 tablespoons flour
- 2 cups milk
- 4 (6.5 ounce) cans chopped clams (Snow’s(R) brand)
- 1 teaspoon Lawry’s(R) Seasoned Salt, or to taste
- 1 teaspoon cayenne pepper, or to taste
- fresh ground pepper to taste
Preparation method
Prep: 30 mins | Cook: 1 hour 15 mins1. Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 15 to 20. Drain and set aside.
2. Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until crispy, about 10 minutes. Place the bacon slices on a paper towel-lined plate and reserve 2 tablespoons of the bacon drippings.
3. Place the butter, onion, and celery in the pan with the reserved bacon drippings. When the butter has melted stir in the flour. Stir in the milk and cook 10 minutes.
4. Combine the potatoes, bacon, milk mixture, clams, seasoned salt, cayenne pepper, and black pepper in a big pot. Bring to a simmer over medium heat. Reduce heat and simmer for additional 30 to 45 minutes, stirring often or it will stick to the pot. Enjoy!
